What's Better than Cupcakes? Cupcakes x 3!

Strawberry Cupcakes with Strawberry Frosting made with real, fresh strawberries.  Like there should be any other kind of strawberry cupcakes.  Who do you think you're talking to?


And I can't take all the credit for this - Jim came up with the idea!  Lemon Cupcakes with Basil Frosting and Toasted Pinenuts (Lemon Pesto Cupcakes)!  Could this be the next big thing?  Well, our doggies certainly wouldn't have minded one... or two...

When Coco Met Mango

Something was missing from our lives... what could it possibly be?  The answer came in the form of...

ANOTHER PUPPY!!


Have you ever seen a happier puppy?!  Coco is pure labby and pure joy, all rolled into one little furball of love.

We adopted Coco(nut) from Indie Lab Rescue, where she was originally named Pixie.  We soon christened her Coconut, partly because she's a little nutty, but most importantly, we just wanted her name to match Mango's (our other puppy's)!  We went through a list of tropical fruit names when we were driving her back home, and Coconut was the best.  Plus, don't you think Mango and Coco just has a certain ring to it?

Can you believe the little cutie was terrified of going up the stairs her first night home?  We had to coax her up slowly with treats and a curious Mango circling Coco's every step up.  Our laptop cord also fell as the first of many casualties to a teething little Coco puppy, but how can you resist that cute face?!

Our three-layered banana cream, vanilla, and dark chocolate decadent tower of indulgence from Jaciva (a combination of the owners' names - Jack and Iva.  They're both so sweet and adorable!  Do pay them a visit if you're ever in Portland, Oregon).  So sad - I should have worn sweat pants instead of a wedding dress so I could have eaten more!  :)

MANGO! Our Little Bundle of Joy!

Today we left home with an important goal in mind - to come home with a new puppy (or any doggie really, because I'm weak when it comes to cuteness)!  We arrived at Family Dogs New Life, a no-kill animal shelter, fully prepared with a long list of names of pups to look at.  Imagine our surprise when our top choice - a beagle / Siberian husky mix only 6 months old - was still available and our turn to look at her was next (it pays to be woken up early for once)!

Poor Mango - she was a nervous wreck throughout our whole "meeting," but she perked up as soon as one of the employees checked in on us.  I couldn't get over just how cute she was (very appropriately a "Mango") and Jim saw enough potential that we signed her adoption paperwork immediately, and drove home one family member stronger.  Mango trembled in my lap the whole time home, but as soon as we were back at our apartment, she seemed better.  A little anxious, but not nearly as scared.

Look how tiny she is!  Almost just double the size of Jim's shoes!

James Stekelberg, Ph.D. (To Be)

We received AMAZING news today!  Jim was accepted to the accounting Ph.D. program at USC (Southern California, baby!) and will be on his path towards pursuing a career in research (with a sprinkling of lecturing, committee work, and other very important professor-y projects thrown in too)!  Who knew - I started out as the researcher (in science, though) in the family, but Jim is going to be the first one in BOTH of our families with a Ph.D.!!
